DIY Multi-Touch
Over at tinker.it!, there's a post describing the equipment list for a DIY multi-touch table, along with a video demonstrating their DIY multi-touch prototype.
Although not built using an actual multi-touch system, the Photoshop Multi-touch concept is very interesting:
